Dear Confrere et Consoeurs:
"Mardi Gras," which is French for "Fat Tuesday," is
February 24th 1998. The textbooks say that "it is a time of preparation
before the start of the fast of lent." But if you go to New Orleans,
Rio de Janeiro, Nice or Cologne, these folks have a whole different spin
on things. . . something to do with spring fertility rites! ! ! It is
a time for merrymaking, parades, music, costumed balls, dancing in the
streets, and most importantly, indulgence in food and wine.
I am pleased to announce our first Chaine gala for 1998, a celebration
of Mardi Gras. This very special and very festive celebration will be
held, of course, on Tuesday, February 24, 1998 at 7:00 p.m. at the Grand
Concourse.
So, The Grand Concourse you say? Well, when it comes to preparing an
authentic, but not quite as spicy Mardi Gras experience, this is the place.
Maitre de Table Restaurateur Rick McMaster, Executive Chef John Klein,
and Pastry Chef Mark McNulty are planning a spectacular evening, with
a menu of festive foods, wines, and Mardi Gras surprises.
This will be a black tie event, Mardi Gras costumes optional, with decorations
in order. May I please have your reservations by February 14th. Address
them to my attention to avoid any post office confusion. The cost is one
hundred ten dollars ($110.00) per person per member couple, and one hundred
twenty dollars ($120.00) per guest. Guests will be accommodated on a space
available basis (see the attached sheet).
Also, mark your calendars for April 19th for a future Chaine Gala. If
