Dear Confrere:

I am pleased to announce our next Chaine gala, the Jeune Commis Awards Ceremony and the New Member Induction Ceremony. This and our Celebration Dinner is at The Duquesne Club on Saturday, March 22, 1997 at 5:00 p.m. The Walnut, Adams, and Bijou Rooms will be reserved for our exclusive use and are a grand setting befitting our evening.

Maitre de Table Restaurateur Melvin D. Rex, Chef Grillardin Keith A. Coughenour, and Maitre de Table Scott F. Neill are planning a spectacular menu of foods and wines consistent with the grandeur of our Induction and Awards Ceremony.

This will be a black tie event with decorations in order. May I please have your reservations at your earliest convenience. Address them to my attention to avoid any post office confusion. The cost is one hundred fifteen dollars ($115.00) per person per member couple, and one hundred twenty five dollars ($125.00) per guest. As you are being inducted as a new member, you may not know some of the customs of the Chaine. Chaine dinners are, in effect, prepaid. So I need your funds as soon as possible so that I may pay for the evening. Include the names of your guests, so that place cards can be prepared.

For those who are unfamiliar with the Jeune Commis (Young Chef) competition, attached is an article that covered last years competition at the CIA's Greystone, in the Napa Valley. This year, I was able to arrange to have Pittsburgh honored as the hosting city for the 1997 Regional Competition. Pittsburgh's Chef Grillardin Dieter H. Kiessling, Certified Master Chef, accepted the Chaine des Rotisseurs position of Regional Competition Coordinator and is hosting the Jeune Commis Competition at Pennsylvania Culinary. The competition will begin at 9:00 am. The awards for the young chefs will be given during our evenings ceremonies. We will also induct them as members.
